Oh yeah, this is the stuff dreams are made of!
For Superbowl Sunday I wanted to do something easy and yummy, so I found a recipe on Food Network and tweaked it a bit and came up with this version.
Canola oil, for frying
1 package square wonton wrappers, cut diagonally in half
2 1/2 cups whole milk ricotta, preferably fresh
2/3 cup confectioners’ sugar plus a bit more for dusting
3 tablespoons orange liqueur
1 cup heavy cream
1 cup miniature semisweet chocolate chips
1/4 teaspoon each allspice and cinnamon (optional)
1/2 cup maraschino cherries, finely chopped (optional)
1/2 cup pistachios, chopped (optional)
1 orange, zested
8 oz bittersweet or semisweet chocolate
Fill a dutch oven about one third full with oil and heat to 350 degrees. Use a thermometer for accuracy.
Fry the wontons in one layer. I used about 5-6 per batch. Flip the wontons after about 1-2 minutes and continue frying for about another 1-2 minutes, watching carefully. Remove the wontons with a slotted spoon and set on a large wire rack set over a shallow pan or paper towels. I used our stainless dish drainer and it worked out great. The wontons should look like this:
Chill a large stainless bowl, the heavy cream and the beaters for a few minutes in the freezer. In the meantime, whisk the ricotta in a medium to large bowl until smooth. Sift in the sugar, allspice and cinnamon and stir to combine. Add liqueur and combine. Remove the items from the freezer and whip the cream in a separate bowl until medium to stiff peaks form with a hand mixer. Fold the whipped cream and about 1/2 cup of the chocolate chips gently into the ricotta mixture. I messed this part up and poured the entire cup of chips in the mixture. No one complained :). Zest the lemon and stir into the ricotta. Refrigerate for about a half hour.
While cannoli cream is in the refrigerator, melt the chocolate in a double boiler over simmering water, stirring often. When smooth, take a wonton and place it over the pot of chocolate and using a wooden spoon coat 1/2 of the wonton with the chocolate. I coated about two thirds of the wontons in chocolate and left the rest plain.
In a serving dish of your choice (I used a three compartment serving piece but the original recipe calls for an 8×8 baking dish) spread the cannoli cream evenly. If you’re using the pistachios and cheeries, place them in rows along with the chocolate chips. Grate fresh orange zest over the bowl and plate the wontons on the side. Dust with confectioners sugar.
