Call the blogging police. I cheated a bit with the title of this post. There’s none of these in these barks,
and there’s none of these,
and there’s definitely none of these.

There’s just gooey caramel, good quality chocolate and lots of other yummy goodness that will be sure to bring a smile, and a few pounds, to the teachers or co-workers, or anyone else, on your holiday gift list.
Chocolate bark is one of my favorite ‘I’m feeling lazy but want to make something’ things to make. It’s unbelievably easy and takes less than 30 minutes to put together. It’s super versatile too. Go ahead and put your favorite ingredients in, or use whatever you have on hand, (which is exactly what I did with the ‘Tropical Christmas Bark’).
I came across the Salted Caramel recipe over on MissInformation’s blog and couldn’t resist giving it a try. While I was at it, I gathered some ingredients and made the ‘Tropical Christmas Bark’ which I adore since I’m a coconut freak (hey, it has cranberries so that kinda counts as Christmasy), and as luck would have it, I came across another recipe in today’s local paper which sounds awesome, but I haven’t tried it so proceed at your own risk. 😉 I’m just including it so I get to say ‘A Trio of Christmas Bark’ in the post title. Sounds better than ‘A duo’, right?

In other news…
Are you completely bored yet with hearing about my Birth Certificate fiasco? I know I am. Here’s the latest: I sent my Confirmation Certificate last Wednesday certified mail to them. As of today, they are saying they don’t have it, although the post office indicates it was received Monday at 9 a.m. ARRRGGGGHHHHHHH!

Oh Doreen – you just solved the dilemma of what to give my hairdresser as a token Christmas gift! I think I will make some bark and put it in a nice glass ball jar with some pretty ribbon! I love lazy easy recipes! My versions of Christmas cookies this year were Nutter Butter Cookies and Lorna Doone shortbread cookies dipped in melted chocolate candy quick with holiday sprinkles added. The chocolate coated Lorna Doone’s are TO. DIE. FOR. good!!!

I think those doofuses at the Department of Records need a swift kick in the pants! Are they just deliberately messing with you, or what??!??!?!! All this over a birth certificate is ridiculous! They need to be held accountable for their blatant ineptitude!!! Ugh!!! 🙁
Good thing this post was about something sweet to balance out the news about your birth certificate!!! 🙂 Hmmmm….maybe if you send them some bark and a note that says something like, “My bark is good, but not as powerful as my bite, so get crackin’!” You think that will get results? 😉

LOL I can always count on you for cutting to the chase Alycia! Well, they said they got it now, BUT…there’s always a ‘but’ it seems she was going to discuss the ‘middle name’ issue and let me know on Monday. You see, the Confirmation Certificate indicates my confirmation name (as they tend to do), which of course is different from my middle name. In the meantime, my local Congressman’s office got in touch with me yesterday and asked for documentation, etc. so he can work on it. Hopefully, I won’t have to go that route, but I think you’re right…they’re deliberately messing with me.

Oh, you are not nice! I had decided I was done with baking and now you share this recipe. I might have to try it, but we don’t own a microwave so I will have to figure that part out. Don’t feel sorry for me without a microwave. This is the first time in over a year that I have come across a need for one. With our tiny kitchen, we thought about what we could do without and the microwave lost out.
I will let you know how the bark turns out!

Hi Carol! I emailed you a response but it seems it came back undeliverable. It’s probably a mistake at me end so no worries. There’s more than one way to skin a cat! Use a double boiler to melt the chocolate or if you don’t have that, place a heat proof bowl over a pot of simmering water.

Titles are important; they have to be catchy to capture our attention, and yours definitely did! Add to that, big, chunky pics, topped off by a sweet story of suspense, and before you know it, you’ve baked up the perfect blog post!
